Beef and Vegetables Over Cauliflower Rice
This gluten-free beef and cauliflower dish is a low-carb dinner recipe that's also great for lunch!
Brown beef in large skillet.
While beef is cooking add olive oil, carrots, onion, broccoli, peas, pepper and minced onion to a separate skillet. Heat and simmer
Cook veggies until they are tender and beef until it’s cooked through. Add salt and pepper to taste.
Spoon cooked cauliflower rice onto each plate, top with beef, top beef with veggies.
- 1 pound MGR cooked grass feed ground beef
- 1 tablespoon extra-virgin olive oil
- 2 carrots, diced
- 1 small onion, diced
- 3 cups broccoli florets
- ½ cup snow peas
- ½ red pepper, sliced
- ½ tablespoon minced onion
- 3 cups riced cauliflower, cooked
- Salt/pepper to taste
